The Pensato olive grove nestles amongst the gently sloping Apulian hills: once the adobe of Frederic II. It is within these surroundings, on this mixed land, that only the very best olives ripen. The Peranzana is the most well known: a juicy olive, with a firm pulp containing oil of a particularly high quality. The olives are handpicked the moment they are ripe, then specially selected, cleaned and cold pressed in the pink granite mills according to the age-old tradition. Due to it's very low level of acidity (0.2%) our precious extra virgin olive oil is easily digestable – absolutely delicious!!
